川澄健の教えるイクラの仕込

生の筋子を買ってきてイクラを仕込みましょう。
イクラは塩漬けと醤油漬けがありますが、ここでは醤油漬けを
作ります。

お店で買う時も塩漬けを買えば、塩抜きして自分で醤油漬けに
やりなおせるそうです。
醤油漬けを買ってまずかったら、直しようがありませんね。

筋子を水の中でほぐしてばらします。お湯の中でやったほうがほぐしやすいのですが、
皮が硬くなってしまうので、皮の柔らかいイクラでないとできません。

大量で処理する産地では、もち網を使って、ほぐすのだそうです。
これだと手早く処理できますが、イクラがつぶれるなどのロスも多いのです。

ほぐした後に薄皮などを取り除くために、真水であらいます。
このときイクラが濁ったように、白っぽくなりますが、ここへ、塩を振ると
あーら、不思議。また、透き通った色のイクラに戻ります。

ざるにあげて水を切ったイクラに、醤油、酒、みりん、出汁などを合わせた漬け汁に
漬け込んで出来上がりです。

３〜４時間すると食べられますが、１晩おくと、イクラが出汁をすって、
さらに美味しくなります。
