A talented Sushi chef within a relatively short period of time - usually around 2 months. This compares with the 10 years usually spent in a tough and strict apprenticeship in order to gain the majority of these skills; training that has the reputation of being severe and hard to achieve.

 

Currently as a profession we are facing many of the same issues faced by many artisans through out Japan, in particular the ageing population and the decreasing number of traditional sushi chefs as more continue to retire. Traditionally being a difficult skill that must be learnt in a tough environment means that many young Japanese people drop out during their traditional training. This makes our style of sushi chef training very relevant to the current generation.

 

 

 

TokyoSushiAcademy has developed a distinctly unique method in order to provide training to many of those people who had given up the long and tough path to becoming a sushi chef.

Currently we have more than 100 graduates every year and are seeing them employed not only in Japan but all over the world.

 

 

Nowadays more people than ever have access to casually enjoy sushi due to global Japanese cuisine boom. As of 2000, even Russia and Eastern European countries have shown an explosive sushi boom which was soon followed by East Asian countries such as China.

 

This rapid growth in popularity also introduced a number of problems which included low quality sushi products, a lack of sushi chefs and shops with low hygiene standards. However, we believe that the popularity of sushi will see these issues soon pass as people around the world become aware of genuine sushi and are able to enjoy the delicate sushi taste anywhere in the world.

 

 

The number of our graduates who actively work as sushi chefs and go on to establish their own businesses globally continues to increase. Just like our students, our graduates are also an important part of TokyoSushiAcademy and help to develop our access to information and jobs around the world as happened with the launch of our SydneySushiSchool in 2007.
